Xmas is coming...

I know it is a bit early... but Xmas decorations are already everywhere and with temperature getting milder here in Dubai, I kind of feel winter calling.

It’s this time of the year when I start fantasizing about Fondue by the fireplace, cook soups for dinner and add cinnamon and nutmeg in every sweet dish.

I guess that’s how this Ginger Banana Bread was born. Just by twisting a regular recipe with ginger, cinnamon and nutmeg. The result is just sooo lovely !

Just a small heads up, this is a bread recipe and not a cake. It deserves to be toasted and to have honey and butter spreaded on to really appreciate it. If you looking for a cake, I advise you to add a bit of honey or maple syrup in the recipe.

Ginger Banana Bread Dairy & Sugar free

Ingredients :

  • 1 cup Coconut sugar

  • 3 Mashed Riped Bananas

  • 2 cups Wholewheat Flour

  • 2 tsp Baking Powder

  • 2 eggs

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground ginger

  • 1 pinch of salt

  • 2/3 cup chopped pecan nuts

Instructions :

  1. Pre-heat the oven at 170C.

  2. In a food processor, mix the mashed bananas and the coconut sugar.

  3. Add the dry ingredients and the eggs one by one. Once the dough is smooth, add the chopped pecan.

  4. Transfer into a greased baking pan and cook for about 50/60 minutes.

  5. Serve toasted with butter and honey.
