Okra Stew (vegan)

Okra was totally unknown to me before I moved to Middle-East. Commonly describes as "Lady's finger" because of its shape, Okra is a vegetable. Originally from Egypt, Okra is found all over the world from North-African to Caribbean tables. Packed with nutrients, it can however has a pretty slimy consistency some people might be disgusted with.

Okra is supposed to help regulate your blood sugar level, boost your immune system and support healthy eyes and vision. It also contains high level of vitamin-C and fibers.
Having an issue with slimy things in general, I personally only used the smaller version of okra called Okra zero which I found more crunchy and less slimy even when boiled. They are delicious in a tomatoes stuff, served with some rice or kasha. Check the frozen vegetables aisle to find them.

Ingredients :
1 confection of frozen Okra zero
1 can Organic diced tomatoes
1 medium Yellow Onion
2 Garlic cloves
1 cup Vegetables broth
1 Tbsp cumin
1 Tbsp paprika
1 Tbsp chili flakes (or more to taste)
1 tsp cinnamon
Olive oil
Salt&pepper

Instructions :
Peeled and chopped the onion.
Heat 1 Tbsp of olive oil in a casserole dish and brown the onion.
Add the okras you previously rinced (not need to unfreeze them, just 2mn under tap water and you are good) and fry for 1 minute.
Add the spices, the tomatoes and the broth and simmer for about 20mn on medium heat, stirring occasionally.
Serve with brown rice or Buckwheat. A perfect vegan lunch !
