Wholewheat Honey Bread

Based on popular demand, here is the recipe of this yummy wholewheat loaf I posted about on Instagram a couple of days ago.

Since I decided to cut on processed white glucides, I was kinda missing bread. Asking a French girl to cut on bread is like asking a British one to cut on Marmite (joking). The problem is the alternatives are really limited. Most on the wholewheat breads on the market contains white flour or a crazy list of dodgy ingredients, and the option of unrefined or gluten free oones lack this comforting bread texture I was looking for.

I make some research for an easy recipe you can bake at home and made of 100% wholewheat flour (which is not that easy !), To maximize the nutritive benefits, I twisted the recipe by adding some seeds and flax.

I promise the recipe is extremely quick and easy. No bread machine is needed. A KitchenAid or Kenwood robot would help, but you can also use your hands, kneading the dough is actually a nice work out ;)

Ingredients :

5 cups to 5 1/2 cups Wholewheat ORGANIC flour

1/2 cup ground flax seeds

1/2 cup seeds mix (sunflower, chia, flax, pumpkin...)

1 1/2 cups Warm water (not HOT, just warm)

1 1/2 Tbsp Instant dry yeast (or the "Levure de Boulangerie" you can find in Carrefour

1 1/2 tsp salt

1/3 cup Organic honey

1/3 cup oil (I used organic sunflower one but it is nice as well with olive oil)

Instructions :

Mix the yeast and the water until the yeast dissolve and add 2 cups of flour. If you use a robot, use the mixer attachment. Cover with a cloth and set aside for about 15/20mn until the dough gets bubbly (leave the bowl outside ideally, on your window or balcony, as the humid and warm Dubai weather is ideal for this).

Once bubbly, place back on the mixer and add the honey, then the oil, the salt, the ground flax seeds, seeds and slowly slowly the flour. Mix well and once done, switch to the hook attachement and knead on medium speed for about 7 mn (if you do it with hands, get ready to sweat for 10 mn).

Oil a loaf pan and once the kneading is done, roll the dough and place it into the loaf pan. Sprinkle some more seeds on top and press them into the dough (otherwise it will fall). Cover with a cloth and leave it for 1 hour (outside again is better) to let it rise. Set a timer for 50 mn and pre-heat the oven 180C.

Bake the bread for 30mn and let cool on a rack. You can keep it for a couple of days wrapped in a cloth.
