Low GI - No sugar Banana Muffins

September is here ! Time to go back to work, to school, to real life after an epicurean summer made of never ending lunches, drinks with friends and gelato a gogo ! Here is a simple recipe, not the prettiest or the most photogenic one but definitely a great snack option for the office or to pack for the kids after school. Loaded with fibers and protein, they do not contain sugar and take 5 mn to prepare.

For 12 muffins :
Ingredients :
3/4 cup Whole Wheat flour
1/2 cup Oats bran
1/4 cup ground flaxseeds
1/4 tsp salt
1/4 tsp Vanilla powder
1tsp Baking powder
1/4 cup Agave Syrup
1/2 cup Almond milk
3 Ripe bananas
1 egg
1 Tbsp coconut oil
1/2 cup Dark Chocolate chips
Instructions :
1. Pre-heat the oven at 180C.
2. Grease a muffins baking tray with coconut oil
3. Mix all the ingredients, except the chocolate chips, together in a food processor and mix. Add the chips using a spatula and transfer the batter into the muffin tins.
4. Cook for 20/25 mn.
