Need a great idea for a breakfast on the go ? Looking to replace this greasy, processed muffin you get on your daily coffee run when you missed the home breakkie - which is basically 4 days out of 5 working days because you are running late. Let's be honest, if we would all love to wake up early and take some time to enjoy a mindful healthy breakfast before kick-starting our day, the reality does not always allow us to do so. The truth is we often end up eating crap or skipping breakfast because we overslept, struggle with kids or change 3 time outfits before finally choosing to get back to the first one we picked (someone said "story of my life " ?). This great recipe is the perfect solution for a breakfast on-the-go. You can make these cookies on your day off and store them for the week. All you'll have to do is open the box on the way out and enjoy them on your way to work !

For 20 cookies :
Ingredients :
1 cup Organic raw sugar or coconut one
1 cup Organic melted butter or 2 mashed ripped bananas
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 1/2 tsp Vanilla extract
2 Organic eggs
3 cups Organic Oats (old-fashioned or quick-cooking)
1 cup Organic Wholewheat flour
1/2 cup ground flax seeds
1 cup raisins
1/2 cup dry cranberries
1/2 cup Pumpkin seeds

Instructions :
Pre-heat the oven at 180 degrees.
Combine all the dry ingredients into a bowl, add the melted butter and the eggs and mix. Add the raisins, dry cranberries and pumpkin seeds and mix again.
Using your hands, shape about 20 little balls of dough and place on a baking tray with parchment paper. Flatten them slightly to give them the cookies shape and cook for about 20 minutes or until browned (not black :) !)
Store in a airtight containers for up to a week, if you manage to not eat them all before this !
