Rice Pudding and Spicy Apples Compote

I have been sooooo lazy in writing this Ramadan. Trust me I have been quite busy in the kitchen but did not really focus on taking pictures or writing down my recipes. However, I have a couple of days to make it up and I HAD to share this absolutely yummy recipe of rice pudding and spicy apples compote. Rice pudding was one of my favorite dessert when I was little, I loved the creamy texture and the taste of Vanilla. This version is slightly healthier yet super yummy. A perfect option for Suhoor or breakfast you can keep several day in the fridge :)

For 2/3 pers. :

Ingredients :

1/2 cup Organic round brown rice

• 
  

3 cups Coconut Milk (or almond but I like the creaminess of the coconut one) + 1 cup

• 
  

1 Vanilla pod 

• 
  

3 Organic apples (Fuji or Golden are the best)

• 
  

1 handful Dried apricots

• 
  

1 Cinnamon stick

• 
  

1 tsp ground Cinnamon 

• 
  

1 Tbsp Raw sugar

• 
  

1 handful Almond and Pecan nuts

• 
  

Options : Cardamom seeds, Orange Blossom water...

Instructions :

1. 
   

In a pressure cooker, pour the rice, the 3 cups coconut milk and the vanilla pod sliced in the middle.

1. Seal and bring to high-pressure, cook for about 35 minutes, remove from the stove and let the pressure drop naturally (means do not open the valve, let it seat for about ten minutes).
   

1. Check the cooking and let add 1 cup of coconut milk to make it even creamier. Stir and let cool.
   

1. Meanwhile, peal and cut the apples, cut the apricots in two and place in a pan.
   

1. Add the almonds, the cinnamon, the sugar and the other spices if you wanted to added some and add a bit of water (about 1cm).
   

1. Cover and cook on medium heat until the apples start melting, stirring occasionally. Do not hesitate to add water if compote is getting to dry or brown.
   

1. Serve the compote on top of the rice, cool or warm, along with nice biscuits or Banana Loaf.
