Poke Bowl - The surfer Meal

Lacking inspiration for healthy recipe, we got it fixed !

Did you hear about this new food trend coming from Hawaii ? The Poke (pronounced POKE-AY) ball is your new best healthy food friend. Filling and yummy, it looks like a Japanese Chirashi but comes from the legendary Pacific Island and trust me if this is what the hot surf chicks of Hawaii eat for lunch... I am in ! Here a recipe of a 20mn to make version but some can be way more sophisticated !

For 2 pers. :

  • 1 big organic Salmon fillet

  • 1 quarter of White Cabbage

  • 1 grated carrot

  • 1 avocado

  • 200g cooked brown rice

  • 1 Tbsp sesame seed

  • 1 tsp grounded of fresh grated ginger

  • 1/2 lemon juice

  • 1 Tbsp light soy sauce + extra to serve

  • couple of drops hot sauce for the spicy version

  • 1 Tbsp chopped fresh coriander

Instructions :

  1. Cook the rice and let it cool down.

  2. Cut the salmon into dices and place in a bowl. Add the juice of the 1/2 lemon, the ginger, the sesame seeds, the soy sauce, the hot one if needed and the coriander and stir.

  3. Slice the cabbage finely. Cut the avocado into dices and grate the carrot.

  4. Place some rice in 2 bowls, top up with the salmon tartare, the cabbage, the carrot and the avocado.

  5. Serve with a bit of extra soy sauce to taste and some pickled ginger, here you go !

Yummy, pretty, healthy !
