Salmon fillet "en papillotes"

Lacking inspiration for healthy recipe, we got it fixed !

Another super fast, super yummy, loaded with proteins, greens and a bit of good carbs recipe. I did it with organic salmon as I love it badly but it works with any other fish fillet (try with SeaBass or Cod).

For 2 pers. :

  • 2 organic Salmon fillet

  • 1 bunch of mini asparagus

  • 1 handfull cherry tomatoes (works also very well with sun-dried ones !)

  • Olive oil

  • Salt&Pepper

  • Some grains as a side (brown pasta, rice, quinoa or millet...)

Instructions :

  1. Pre-heat the oven at 180C.

  2. Start cooking the side, I my case I did some millet, just throw it in boiling water and cook for about 25 minutes

  3. Wash the asparagus, the cherry tomatoes and cut them in half.

  4. Place them in the middle of a square of foil. Add the Salmon fillet on top.

Sprinkle some olive oil and salt&pepper. Close the papillotte and place in the oven for 20 minutes.

Ready !
