It's Holidays Season ! Save my diet !

Ok as you know I am not in favor of dieting during the holidays season. Indulging (with some limits indeed) is perfectly fine and won't make you fat from one day to another. However, it could be a good idea to not over indulge and try to calm down in between Xmas and NYE, starting by eating some soup at night instead of the remaining of the foie gras on bread :) but to keep it entertaining I took the liberty to melt a bit of cheese on this one...

Melting Cauliflower Soup
For 3/4 persons :
1 Organic Cauliflower
2 garlic cloves
200g Comte cheese
Pine nuts
Salt&pepper
Instructions :
1. Cut the head of the cauliflower into pieces and place them in a large saucepan, cover with water and boil for about 20mn or until the cauliflower is smooth.
2. Drain the water (keep just a bit) and place into a food processor along with the garlic cloves, the Comte cheese cut into chunks and the salt and pepper.
3. Blend until smooth, add a bit of water or almond milk if too thick.
4. In a small pan, brown the pine nuts for a couple of minutes (careful not to burn them !).
5. Serve immediately, with some pine nuts sprinkle on the soup and a bit of fresh black pepper.
