No Sunday Dinner inspo this week, Christmas is coming and I am flying home into the cold tomorrow. I literally do not feel like eating anything healthy but stuff myself with french goodness for 7 days :) So dieters, life is about balance and it is this time of the year that you must let go and indulge !!
However, if you wanna limit the damages, here is a recipe of a yummy yet "almost diet proof" dessert. Perfect with a cup of Mariages Freres cup of Xmas Tea...

My Ginger Bread
For 6 persons :
110g butter
320g organic honey
1 egg
270g flour (with or without gluten)
130g Almond milk
9g Bicarbonate of soda
1 tsp ground ginger
1 tsp ground clove (if you can not find ground one, infuse some in the almond milk for a couple of minutes and filter)
1 Tbsp ground cinnamon
zest of 1 orange
50g almond chunks
Instructions :
1. Pre-heat the oven at 165C.
2. Over a medium-heat, melt the butter with the almond milk and let cool down.
3. In another pan, heat the honey at 50C (use a kitchen thermometer to control).
4. In a mixing bowl, whisk the egg and add the milk keep whisking until it gets foamy.
5. Add the tepid milk, the zest of orange, the flour , the bicarbonate and the spices. Mix until smooth.
6. Pour in a greased baking pan. Sprinkle the almond chunks and place in the oven for about 50mn.
7. Sprinkle with ice sugar once cool and before serving.
