The Fall Soup

Lacking inspiration for healthy recipe, we got it fixed !
This week it finally starts feeling a bit colder at night and it is soup season again ! This one is just perfect to warm you up and fight the cold you got thanks to the change of season, yes even in Dubai we feel this :)

For 2/3 pers. :
1 organic butternut
1kg of organic carrots
1 can of coconut milk
1L vegetable broth or water
2 Tbsp of turmeric powder
Olive oil or butter
Cashew nuts
Salt&pepper
Instructions :
Peel and cut the butternut and the carrots into chunks.
In a large pan, heat the olive oil or the butter. Brown the vegetables for about 5mn and cover with water or the veggie broth. Simmer for about 20mn or until vegetables are soft.
Transfer the vegetables (without the broth) in a mixer, add the coconut milk, the turmeric and the salt&pepper. Mix until soft, using a bit of broth if too thick.
Warm up if needed and garnish with some cashews nuts bits.
