The Summer Mille-Feuilles

Lacking inspiration for the Sunday dinner, we got it fixed ! Winter is slowly starting and Dubai and temperatures get more acceptable. However, it still feel like summer, so this week I suggest a fresh veggie cake, ideal as a starter or a main for an outside dinner on the balcony, enjoy !

Summer Mille-feuilles
For 6 pers. :
1kg Ripe Tomatoes Roma
1kg green Zucchini
2 Sainte-Maure-de-Touraine (or other fresh goat cheese log) I buy my on www.maisonduffour.com
1 bunch of fresh basil
Extra Virgin Olive Oil
Salt&pepper
Instructions :
Wash the vegetables and slice them very finely.
Slice the goat cheese using a sharp and damped knife.
Grease a springform cake tin with some olive oil and place a layer of zucchini slices.
Cover with one layer of tomato slices and another layer of goat cheese slices.
Sprinkle some basil leaves, drizzle some olive oil and add salt and pepper.
Repeat the operation until the tin is full.
Cover with cling film and reserve in the fridge for a couple of hours.
10mn before serving, remove from the mould.
Serve and cut as a cake
NB. : you can also make some individual portions as per the picture, but in the case make sure to choose small tomatoes and zucchini, to keep it easy to eat
