Organic Salmon "en papillote", Avocado pesto & zoodles

Lacking inspiration for the Sunday dinner, we got it fixed ! You might thinks "zoodles ? as last week ??", yes I know, my bad I am totally addicted :) The great thing with zoodles is as pasta they are pretty versatile. This time the come as side for a delicious piece of Organic salmon cooked in the oven "en papillotes".

Organic Salmon "en papillote", Avocado pesto & zoodles
For 2/3 persons :
• 2/3 yellow or green zucchini
• 1 piece of Organic salmon per person
For the pesto :
• 1 Ripe avocado1
• 1 bunch of fresh basil
• 2 small garlic cloves
• 1 Tbsp lemon juice
• 1/4 cup olive oil
• 1/4 cup pine seeds
• Salt&pepper
Instructions :
1. Pre-heat the oven at 180°.
2. Prepare the pesto first, place all the ingredients in a food processor and mix until smooth and creamy.
2. Wash the zucchini and turn them into noodles using a Veggie noodles machine (Ace, Carrefour, Tavola...).
3. Cut some foil or greaseproof paper for the papillote (https://www.youtube.com/watch?v=WLbKvPlaKng)
4. Mix the zoodles with some pesto until well coated and place a portion in each square.
5. Add the salmon on top and coat it with some pesto.
6. Fold the the papillotes (https://www.youtube.com/watch?v=WLbKvPlaKng)
7. Place in the oven for 20mn or 25 if you like your fish well done.
