Zoodles Pomodoro & Basilico

Lacking inspiration for the Sunday dinner, we got it fixed ! This week we cook a classic of the Italian cuisine but without the carbs option... Just in case you need to behave, otherwise the sauce work perfectly with Wholewheat pasta or Gluten-free one :)

Zoodles Pomodoro & Basilico

For 2/3 persons :

• 2/3 yellow or green zucchini

• 1 can Organic crushed tomatoes

• 2 crushed garlic cloves

• Olive oil

• Salt & Pepper

• 1 handful of Basil leaves

Instructions :

1. Bring some salted water to boil.

2. Wash the zucchini and turn then into noodles using a Veggie noodles machine (Ace, Carrefour, Tavola...).

3. In pan, heat a bit of olive oil. Brown the crushed garlic cloves for about a minute and add the tomatoes. Let simmer for about 5 minutes, reducing the heat.

4. Submerge the zoodles in the boiling water and cook for 5 minutes.

5. Drain the zoodles and add into the pan. Stir to coat the pasta with the tomatoes sauce. Add the basil, some pepper and serve.

6. You can even add a bit of parmiggiano on top :)
