Lacking inspiration for the Sunday dinner, we got it fixed ! This week we are travelling to India and because after the Eid festivities we need to take it easy, you know what I mean, let's go for a yummy vegan, packed with protein and low-fat option. This recipe of Dalh will soon become on of your favorite !
When I say Dahl you think butter and fat, I answer coconut milk ! Cherry on top, it literally takes 5 minutes to prepare and 45 minutes to cook...

Bobo Dahl
For 2/3 persons :
• 2 tbsp coconut oil
• 2 small yellow onions finely chopped
• 3 cloves garlic finely chopped
• 1 Tbsp ground ginger
• 2 tsp curry powder
• 1 tsp ground Tumeric
• 1 tsp of Chili Flakes (or more to taste...)
• ½ tsp black pepper
• 1 tsp salt
• 1 tsp moutard seeds
• 2 cups red lentils
• 1 can organic coconut milk
• 1 can organic diced tomatoes
• 2 cups water
• Fresh chopped coriander for topping
Instructions :
1. Heat the coconut oil over medium heat in a large sauce pan or wok and cook the onions, ginger and garlic or 5 minutes, stirring frequently.
2. Rince the lentil and add them in the pan along with the coconut milk, the water, tomatoes and spices.
3. Cook for about 35-45 minutes until lentils are soft.
4. Remove from heat and serve with fresh chopped coriander. As promised, fast, easy, flavory and healthy !
PS. : if you do not like tomatoes, you can just replace them by 1 extra cup of water :)
