Som Tam / Papaya Salad

A classic of the traditional Thai cuisine, tasty, colorful, healthy and refreshing for your Dubai summer.

Som Tam
For 3/4 persons :
• 2 garlic cloves!
• 5 dry red chillies
• 2 Tablespoons roasted peanuts or cashews
• 1 Tablespoon of brown sugar(optional)
• 1 Tablespoon of Fish sauce • 1-2 limes • 15 cherry tomatoes • 2 carrots • 1 handful of green beans • 1 green papaya (or classic orange one if you do not find green one)
Instructions :
1. Put the chillies in a bit of water and soak for 10mn. 2. Wash the vegetables. Peel the papaya, slice in 4 and remove the seeds. Peel the carrots and cut off the tips. Grate these using a manual grater or a kitchen robot. Slice the cherry tomatoes in 2 and cut the green beans into 1.5cm segments. Mix all the vegetables all together in a salad bowl, except the green beans, and reserve in the fridge, 3. Drain the chillies using some kitchen paper and chopped very finely along with garlic. Put into a small bowl and pour the fish sauce, the sugar (still optional) and the juice of the 2 limes. Mix well. 4. 10 minutes before eating. Pour the sauce on the vegetables and mix well until every piece is coated with sauce. 5. Heat a small pan over medium heat and roast the nuts (being careful not to burn them, always keep an eye on it). 6. Serve the salad on a square plate, with the green beans, the roasted nuts and some slices of fresh lime.
