Vegan Treat

I am not a vegan but as I believe in balance, I am in favour of vegan treats from time to time instead of building all the meal around meat as my parents use to do.

With the Ramadan, I spent a bit of time reading some middle-eastern cooking blogs and books and the memory of the awesome Fallafel sandwiches from the Rue des Rosiers in Paris popped up and I decided to give it a try.

Verdict : it is way easier than you think to make and can be use as a base for so many occasion and dishes : for a buffet, for an aperitivo, as a starter, in a salad or as sandwich... Fallafel, made out of Fava beans or chickpeas is your new best vegan friend !

Home-made Fallafel

For 15/16 pieces :

- 250g of dried chickpeas (if lebanese style) or broad/fava beans (if egyptian style)

- 1 small onion

- 2 garlic cloves

- 1 Tbsp of ground coriander

- 1/2 bunch of fresh parsley

- 1/2 bunch of fresh coriander

- 2 tsp of baking powder

- 1 pinch of salt

- vegetable oil for frying

- sesame seeds

Instructions :

- Soak the chickpeas or beans overnight in a good quantity of water. Rince and drain well (this part is extremely important, if not drain well, the preparation will be watery and it will be impossible to mould the fallafel balls).

- Place the beans in a food processor along with all the other ingredients and process until the mixture is something between couscous and paste (you do not want it to be pureed).

- Place in a bowl, cover with plastic wrapping pepper and reserve in the fridge for 1/2 hours.

- Fill a skillet with vegetable oil, about 1,5cm deep and warm up until it start smoking.

- Mould the paste into small balls and roll them into sesame seeds before plunging them into the oil.

- Fallafel must float and create small bubbles around them. If not wait a bit for the oil to get hotter.

- Cook for roughly 2 minutes on each side or until brown and crispy.

- Remove from the oil with a slotted spoon and drain on paper towels.

- Serve with Tahina or in a salad or use them for pita sandwiches along with salad, cucumber, tomatoes, onion and garlic sauce.
