D-1 before the week end

It is already Wednesday night and it means only one little day is missing before the week-end ! What are your plans for this one ? It is way too hot to go to the beach... maybe a quiet day by the pool at home and a late sleep if the kids are leaving you alone (or your boss for some of you)...
But before dropping everything and switch off you phone you should definitely do grocery for a nice family/friends brunch over the week end. You only need some yummy fresh fruits (in summer you have the choice), some good bread and some eggs !
A brunch would not be a brunch without some eggs but I would like to share with you a different recipe, just to vary from the traditional scramble or Benedicts, a local recipe of the region full of flavour and super filling : the Shakshouka. It consists on some eggs poached in a sauce made out of tomatoes, green chili peppers, onions and spices (cumin and paprika) and is typical from North Africa and Levant. Just follow the recipe to bring your traditional week-end eggs to the south costs of the Mediterranean sea.
Shakshouka

For 2/3 serves :
- 4 Organic eggs
- 2/3 green chili peppers (japanelos)
- 1 can of Organic diced tomatoes
- 1 small yellow onion chopped
- 3 garlic cloves crushed and sliced
- 1 tsp of cumin
- 1 Tbsp of paprika
- Salt&Pepper
- Olive Oil
- 100g of Feta
- Parsley
Instructions :
- Pour some olive oil in a pan and brown the onion and green chili peppers for about 6 minutes.
- Add garlic and the spices and cook for 2 more minutes stirring occasionaly.
- Pour the tomatoes can along with 1/2 cup of water. Reduce the heat to medium and simmer for about 15 minutes stirring occasionaly. Season the sauce with salt.
- Crack the eggs over the sauce and cover for about 5/6 minutes.
- Crumbled the feta on the eggs. Add pepper and fresh parsley to taste.
