Healthy does not mean boring. Yes you can eat vegetables and chicken and still feel like you are savouring a great dish at your favorite restaurant.
How to achieve that ? Think flavour ! And how to bring flavour ? Think spices, herbs, condiments...
Here is how I turn a boring chicken filet with vegetables into a delicious healthy lunch.
Rosemarino Chicken Filet & French Ratatouille

For 2 serves :
For the chicken :
- 2 Organic Chicken filet (roughly 500g)
- 30g of butter
- Rosemary
- Herbs
- Salt&Pepper
Instructions :
- Pre-heat the oven at Cº180
- Place the filets in a dish, cover with butter, herbs, rosemary, salt&pepper and place in the oven for 15 minutes.
- Turn the filets and pour a bit of water. Put back to cooking for 10 more minutes.
- Turn again the filets and set the oven on grill mode to roast the chicken for 5 minutes.

For the ratatouille :
- 1 oignon
- 1 big Zucchini
- 1 medium Eggplant
- 1 can of Organic diced tomatoes
- Rosemary
- Olive oil
- Salt&Pepper
Instructions :
- Dice the oignon, zucchini and eggplant.
- Pour some olive oil in a pan (wok style) and brown the oignon (only the oignon !! This is the secret of the Ratatouille, each veggie must be fried separately).
- Reserve the brown oignon in a cooking pot and repeat the operation for zucchini then eggplant.
- Once all the veggies have been fried. Place them in the cooking pot, add the tomatoes, the rosemary and salt and pepper and cook on medium flame for about 25mn stirring from time to time.
