The perfect Breakfast

Any Nutritionist will tell you that breakfast is THE most important meal of the day... but for so many years I sticked to the black coffee quickly sipped before rushing to the Metro pretending I was never hungry in the morning and was ending up inevitably at 11 am at the vending machine eating any c*** I could find.
Since I lived in Italy, where the morning meeting at the Bar is a social compulsory behaviour, I get rid of this habit starting slowly to add a Cappuccino & a Cornetto Integrale to my morning routine.
But in Dubai forget about the Cornetto, with the sedentary Lifestyle of a desert city, I had to review my italian colazione and opt for a healthier yet filling breakfast.
Thus, my morning meal is usually a good combination of protein, carbs and fat (yes we need fat !!!) involving most of the time eggs (organic one of course ! Especially here in Midde-East where eggs have options...).
Hereunder is one of my favorite recipe, easy to cook, super filling and Hubbibi approved (yeah men can it that aswell... no girly ingredients needed).
Cheesy Scramble Organic Eggs on Toast with crispy Beef Bacon

For 2 serves :
- 4 slices of any wholewheat organic bread (home-baked in my case, I'll post recipe later)
- 4 organic eggs
- Organic grated cheese (mozzarella, cheddar, emmental...)
- 5cl of milk (full-fat, low fat, almond, rice...)
- 1/4 tbsp nutmeg
- 2/3 slices of beef bacon
- salt&pepper
Instructions :
- Detail the beef bacon in small slices and grilled them in a pan until crispy. Keep aside.
- In the same pan pour the eggs and the milk and keep stiring to scramble.
- Add some cheese, the nutmeg, some salt and stir for a couple more minutes.
- In the meantime, toast the bread. Set in plates. Top with the scramble eggs and sprinkle the crispy bacon and some black pepper.
Add a cup of coffee or Mariages Freres Lapsang Souchong Smoked Tea and your are set until lunch. No 11 am dodgy snack required.
